Frittata is a very low carb egg-based Italian dish similar to an omelette or crustless quiche. I bake my frittatas with wholesome vegetables and your choice of sausage, ham, or bacon. My frittatas are in the shape of a large muffin, so you can eat it on the go or with a plate and fork. Add cheese if you'd like.
Baked Blueberry Oatmeal Cups
These little oatmeal cups have a slightly soft and chewy texture and they make a pretty healthy breakfast, too. They're lightly sweetened with some honey and just a touch of brown sugar. They're perfect by themselves or warmed up and enjoyed with a little Greek yogurt and a cup of tea.
