Shrimp and Tomato Curry
2 tablespoons vegetable
oil
Heat oil in skillet. Add
mustard seeds and saute until they begin to crackle. Add tomatoes,
garlic, ginger and jalapeno. Saute until tomatoes soften, about
three minutes.
Add shrimp and saute until opaque in center about 5
minutes. Transfer shrimp to bowl.
Add tumeric, salt and chili powder to skillet and stir
for 1 minute. Add coconut milk and simmer until sauce thickens
slightly, about 3 minutes. Return shrimp and juices to pan. Add 4
tablespoons cilantro to pan. Season with salt and cayenne pepper.
Transfer to platter and sprinkle with remaining cilantro.
Serve with steamed Basmati Rice.
